Apple and cinnamon milk risotto

Now that we are eating our main meal at noon, it can be a bit of a free for all later in the day when we're hungry again. The idea is to have something light and sometimes that is fruit or yoghurt, at other times, particularly if the noon meal has been soup, we need something more.  Hanno loves milk rice and rice pudding so I came up with a variation on that theme and yesterday cooked apple and cinnamon milk risotto.








It's simple made using the normal risotto making technique but you can cheat at the end if you like. I did.

  1. Start off by bringing four cups of milk to the boil and then keep it hot. 
  2. In a separate pan, melt about a tablespoon of butter, and add two peeled and thinly sliced apples. Stir this until the apples start to caramelise slightly. Then pour in ¾ cup risotto (Arborio) rice and stir the rice so it's coated with the butter. 
  3. Add sugar or honey to taste, two level tablespoons is enough for us.
  4. Add a splash of vanilla extract and then two ladles of the hot milk. Stir this until the rice has been absorbed into the milk. It will take three or four minutes. 
  5. Then add one ladle of hot milk and repeat the stirring until the milk has been absorbed. If you've been stirring all this time, the starch will have been released form the rice and you'll have a nice creamy looking rice, but it won't be cooked yet. 
  6. Here is the cheat bit - if you don't have the time to stand at the stove stirring, place a lid on the pan and put it in the oven about 175C/350F for about 30 minutes or until the rice is cooked. Or you can stay at the stove stirring in the same way you'd make a traditional risotto, until the rice is cooked.
Serve this with stewed apples on top - I used a can of Ardmona Australian pie apples and two fresh Australian apples to help our apple farmers. Then sprinkle lightly with cinnamon and serve warm. It's a delicious winter pudding and very nice too, cold,  the following morning for breakfast.

Decluttering update
Today's item for my bins, this time the rubbish bin, is a pair of old slippers. They should have gone a few years ago.

    My aunt used to make a cinnamon rice pudding when I was a kid, I have t had it in years!

  2. I use a similar recipe from my mother but instead of cinnamon you add Saffron and a bit of sugar (one or two tablespoons).

    I also make a lovely pudding by cooking Cream of Wheat (wheat hearts) in milk, grated lemon rind and sugar. The portions are two parts milk to one part wheat hearts. Sugar to taste. Serve with a spoon of raspberry jam.

    I also cook my oatmeal in milk. This makes it creamy and sweet without the need to add much sugar -just a few raisins.

  3. I was going to tell you about oven risotto, but I see you know that trick! It's the only way I will make risotto. I have made savory risotto for breakfast before, but I will try this milky apple version, too. Looks good. I have also had good success using barley and short-grain brown rice for a bit more nutrition (and cheaper!) than arborio rice.

    Our Sunday suppers are always light and always the main thing is popcorn popped on the stove. Then we fill in with whatever fresh fruit or veggies or little bits of leftovers we can find. Sometimes, it's just popcorn, apples, and cheese.

  6. I have been thinking of changing our main meal to the middle of the day once I finish my job at the end of the year. That risotto looks delicious.

  8. Oh I love a baked rice pudding. So quick, cheap, easy, and delicious! It's the ultimate comfort food. I make mine with sultanas and a dash of vanilla too. Mmmmmmm!

  9. Looks delicious! I am going to try it out for dessert tomorrow night and see if it gets my children's lick of approval!
    I have been thinking lately to move our main meal to midday as well, save having a heavy meal on our stomach come bed time. I homeschool my youngest 3 so that makes it easy, but my eldest has just started school so other I make her a bigger lunch or save our fare for her dinner at night ( I have found that since starting school she doesn't eat all of her lunch but is hungry when she gets home!)

  12. I am joining your de-cluttering challenge too - will post photos next week as all I threw out this week was a pile of old undies, and nobody needed to see what state they were in! That apple and cinnamon risotto looks fantastic, I like to use a low GI rice like basmati or brown rice and find that they make a very nice risotto. Mmm I thinking of a version with brown rice and cinnamon and raisins sounds good.

  14. Hi Rhonda, I've been following your blog since reading about you in the Courier Mail some weeks ago. Love your work - very inspiring. I'm joining the decluttering challenge and have been busily deleting files and tidying up the desktop computer today and it's now packed up and waiting to go to its new home on Thursday.
    Your rice pudding looked so delicious that I had to make a version of it for hubby's dessert today - one of his favourites. I've also been using your 5-minute bread recipe - scrumptious!
