But re: tomato sauce: I stumbled over a recipe in the library that saved me when I had an unexpected bumper crop of 80 lbs of tomatoes. It said to slice them half inch thick and lay them one layer thick on a greased cookie sheet. Roast at 300 degrees for 3 hours, then run them through a food processor. Nothing is done to skin or seed. The result is roasty-flavored and a thickness between sauce and paste. I often turn the result into spaghetti sauce before freezing it for winter. When the frost is coming on I pull all the tomatoes in - red, pink, and green - and let them ripen on a sheet on the sun porch. Every Saturday for a month and a half he red ones come in for roasting and saucing.
